Or more simply, just allow users to self host. Users can trust one version of the app, and then only update when they need a new feature, at which point they can choose to trust that version.
However, that already exists. I can use NextCloud in this manner and the have a note app.
Personally I use NextCLoud for things like Notes[1], while it is a web app it is self hosted. Obviously this means you then need to run NextCloud yourself which is an entirely different problem.
Maybe it time we make it easy for people to host thier own clouds… Like Nextcloud. All in one at home server with Owncloud Plug-N-Play. While we are at it, have it ready to go for hosting emails and Federated Social Media.
To be honest, it would be a challange, but totally doable.
There is also Nextcloud which provides for most self-hosting needs in a single package (calendar, tasks, file storage, notes, music, photos, device tracking, etc.)
