I checked Apple Software Update on this computer and they are all unchecked by default.

Macs still give the user full control over Software Update.

There is a setting for "Install system data files and security updates" and if you turn it off, even critical security updates will not be installed.

What the hell setting do you have enabled where OS X does that? It doesn't even tell me about updates, I have to go check them manually in the App Store (which segfaults about half the time)

On the contrary, I've completely disabled OS update checks via OS X's settings menu on both my personal (El Capitan) and work (Sierra) computers. I've managed to keep both up to date on security updates while avoiding obnoxious High Sierra update reminders quite easily.

iOS is terrible in this regard, however. I've only managed to keep my phone on iOS 9 through a bug/workaround involving a tvOS beta cert.

Both true and false. The OS is not receiving updates, but Catalina and newer have a built-in malware scanning tool that does continue to receive updates from apple. You can read about that here.

This is not distributed via Software Update, but via Apple's XProtect malware protection system and should be updated silently in the background. You can check /System/Library/CoreServices/CoreTypes.bundle/Contents/Resources/XProtect.meta.plist to see if it's up to date. To force an update, run "sudo /usr/libexec/XProtectUpdater" or "sudo launchctl start com.apple.xprotectupdater".

FWIW Apple received lots of hate for making the updater install other software by default, and changed it promptly.

I think Apple only goes back to 10.9/Mavericks. I'm running that and got the Security Update 2016-0004 patch set.

Well it's listed under "Apple security updates".

Out of three Macs I run I got notified about the new version on one. On two others "Check for Updates" got nothing.

Apple doesn't even supply security updates for 10.9 anymore.

it is a bug. apple does not do updates this way. there is no reason for them to surprise users like this.

True, but it means you don't get security updates, because Apple doesn't provide full security updates except on the newest OS:

That is normal in the general update notice. There is always a more detailed security update notice, for OS X 10.9.2 it can be found at:

10.12 is Sierra. I cannot see any security update in the updates tab of the App Store app, nor in the list of updates that were installed in the last 30 days.

This is what Apple wants you to believe. In reality, Apple routinely skips security patches on older versions: https://www.vice.com/en/article/93bw8y/google-caught-hackers...

The only way to be safe on Apple's computers (and phones) is to update to the latest version the day it comes out.

This is insane, was there additional software installed by your employer that might have conflicted with the updating process? In my case we have lots of remotely controlled macOS updates that get triggered and supervised by the company I work for.

Macs from 2012 got the latest security update four days ago.

Macs from 2013 are supported by the newest macOS.

iPhones and iPads from 2013 got the latest security update a month ago.

iPhones and iPads from 2015 and 2014 respectively are supported by the latest iOS and iPadOS.

Classic Apple, right?

That was a weird one, but nonetheless, here's the list of security update, and there's been nothing for older versions since October 2021. https://support.apple.com/en-us/HT201222

Also note that 12.5.6 was for a single actively exploited CVE and no other vulnerabilities.
