I imagine this changed when paper certificates went away.

This was an informal thing for a long time, but I didn't know that there's now an actual certificate. I may have to go back and request mine retroactively.

Extended validation certificates still exist, and do require the paperwork.

Certificates are pinned too.

certificates costs money and the world was mostly manual in the past (and in a lot of places still is) you can still order a 3 year cert.

No idea, but the certificates that focused on those things became enduring jokes.

What are the alternatives?

About 20 years ago, I remember having to go through tons of hoops to get a certificate. Faxing corporate docs and other bureaucracy. That can all be forged.

Does it matter? Those certificates are only paperwork for the legal department. They have absolutely no meaning in practice.

Yes but obtaining a digital certificate requires paperwork as well. And not to forget, renewing it every year (or two).

Those certificates were replaced and/or revoked.
